 Low Country Cajun Seafood is an exclusive Pop-Up restaurant series, Catering and Food Concessionaire; pushing the boundaries of modern American Cuisine by adding our Low Country Gullah & Creole-Cajun cuisine to your palate.

Low Country Cajun Seafood & More was created because we have always wanted to have a restaurant,  but didn't want to be tied down day in and day out, since we travel with our family 65-70% of the time.  We realized by having a Food Truck/Trailer and Pop-up restaurant series this would meet our wants and needs.  This will give us an opportunity to share our love of cooking and some wonderful Low Country South Carolina-Gullah & Creole Dishes with the Scenic City Chattanooga. Tennessee, Sweetwater, TN, Cleveland, TN,  Athens, TN , NW Georgia,  North East Alabama and Surrounding areas.
The​ Head Chef, LaTina Alston Wilkins, is originally from the Low Country area small town Cross, South Carolina, (35 minutes from Charleston) always enjoyed cooking and baking for her family and friends.  Many have asked her if she will open a restaurant, because the food was nothing like they have ever tasted in the area.
LaTina takes many of the Low Country Gullah & Creole dishes she grew up on and put a spin by adding her unique creativity and love in her dishes. Many of our food are very similar to the delicious food found in Louisiana and the Delta . She loves spending time with her family 2 daughters Leiah and Desha and Son Kailend along with her Sous Chef, the love of her life Jay Wilkins.

LaTina Wilkins

​​LaTina is a Professional Head Chef from The University of Hard Knocks.  She has been cooking for over 30 years and specializes in Low Country Gullah, Cajun-Creole  & Southern Soul Food cuisines with her unique twist on some favorite dishes she grew up on in the Low Country of South Carolina many of the food is similar to New Orleans food.

Jay Wilkins

Jay is the Sous Chef from The University of Hard Knocks. A US Army War Veteran, he has been cooking for over 25 years and specializes in Cajun & Low Country and Southern Soul Food cuisines .  Jay family is from Mississippi and moved to Kansas.  He grew up in Wichita, Kansas and Oklahoma City, Oklahoma where he met Chef LaTina at Grad School at the University of Oklahoma.
